I don't think they'll fit properly but I'm not sure. The proper offset for oem-width wheels (8.0" front and 9.5" rear) is +50mm.

Offset is all about the position of the hub mating surface relative to the center line of the wheel...so no, a positive offset does not necessarily mean they'll stick out.

Here's a diagram that may help:

well they fit on the car fine, but they do stick out a little bit in the rear and a tad bit on the front. I don't know if thats bad or not, they rub a little bit on the arches but won't the coil overs allow me to correct that? Those are installed tomorrow. Here is a picture of the old & new,

Yes, most coilovers are height-adjustable. However, note that as you increase the height you (usually) also increase the preloading on the spring which may cause (for example) a bit of a harsher ride (among other things).
