If it was a 'parts guy', then he was probably blowing smoke out is ass cause he really has no clue about engine work.
Most parts people don't know how the car parts actually fit on the car. Also, that's why I won't ever use a "shim head gasket". Some people have 'shimmed' the headgasket and gotten away with it. I personnaly like a 'one piece ring' at the combustion chamber mating point. A shim is likely to leak. I bet the parts guy would say yes, if you asked if it would be OK to use FIPG material instead of the headgasket.
