Default sensor?

I recently bought a JDM 7m-gte and noticed that on the thermostat housing cover( after the thermostat), instead of a vacuum thermo switch for the evap, there is a looks like a temp sensor 1 wire type. Whats this sensor for? Do I just remove it and not worry about it. I think the only coolant temp sensors need is for the cold start and normal coolant them sensor.

Depends on the year of the motor and of the car.
Should have one two prong sensor for the ecu, one two prong for the cold start injector and one one prong for the temp gauge in the dash, unless I am forgetting something. I would either use the t-stat housing from your old engine, or swap the sender for the evap vsv.

You mean the three sensors on the thermostat housing?

The middle one senses the coolant temp and shuts off ur A/C if it gets too hot. You can keep it unplugd had mine that way for months

The BVSV is not used on the UK models, its not uncommon to remove the BVSV and screw in a temp sender unit to use with an extra temperature gauge, which may be the case with yours.
