I wouldn't worry too much about the gas door. You can open it from inside the car by removing one of the access panels in the hatch if the cable were ever to break.

I'd say 3.8's and 5.7's are about the same when it comes to intake gaskets, but they're the same engine(minus 2 on the v6 of course),...
