Some of the hoses will affect operation in ways you won't notice much but they may make a significant difference in the efficiency of the engine. Others will make a fairly big difference which you may not realize as they were wrong from the beginning. It's worth the trouble to ensure they're all run properly and replace them while you're doing it. The OEM vacuum lines often become porous as they age and degrade (on top of hardening and cracking).
