Question Can't get alignment right

I just finished a major suspension overhaul/upgrade (tein coilovers, poly bushings all around, ST sway bars, new outer tie rods and lower ball joints) on my 1988 MKIII Turbo. Took it to the alignment shop and they can't get the front left tire straight. It is still way toe out and the tie rod end is already bottomed out on the inner tie rod. The right they could only just get straight, but its bottomed all the way out too. I'm going the see if the inner tie rod backed out at all as I was loosening the outer, but I didn't notice anything off as I hat to replace that side boot as well. Wheels are OE and tires are standard. I am pretty sure the steering wheel tracked straight last I drove the car, but it's been a while......
