I cleaned my engine bay on a white 89 mk3 with engine cleaner, a rough sponge (one that you would clean a pot or pan with) and a tiny bit of water that I used VERY CAREFULLY.

Gunk Engine Cleaner Foamy edition. Buy this at any auto parts store, I cant remember how much it is but it isn't expensive at all. It has a blue lid. can is blue orange and white. The same company also makes a degreaser that works well but just the Foamy edition should get the job done.

To use: spray it in a small area, then scrub with that rough sponge. the more elbow grease the better. after you are done scrubbing, take a small bit of water and just kinda rinse it off. Repeat it a few times and BE CAREFUL AROUND ELECTRIC. YOU COULD SHORT SOMETHING OUT. I did my whole engine bay in about 90 minutes and then went to a car show!!!
